Cos'è il break even per coperti in un ristorante?
Il break even per coperti indica il numero minimo di clienti (coperti) che il tuo ristorante deve servire per coprire tutti i costi fissi mensili. È il punto in cui il fatturato pareggia le spese fisse, senza profitto né perdita.
Come viene calcolato il numero di coperti necessari?
Il calcolo divide i costi fissi mensili per lo scontrino medio. Il risultato indica quanti coperti totali servono nel mese. Dividendo per i giorni di apertura si ottiene il numero minimo di coperti giornalieri da raggiungere per coprire le spese.
Cosa rientra nei costi fissi mensili di un ristorante?

Three figures: the monthly fixed costs of the venue, the average spend per cover and the number of days open in the month. From those come the minimum covers per day.
How are the minimum daily covers worked out?
By dividing the monthly fixed costs by the average spend, and then the monthly total by the days open. Both results are rounded up to the next whole cover.
What counts as a monthly fixed cost in a restaurant?
Rent, wages, utilities and insurance, that is, the costs that stay the same whatever the number of covers served. The break even calculation starts from that sum.

We are an Italian company and we work under the GDPR and the other European rules, with the privacy notice and the consent request in plain sight. One thing we say in full rather than hiding it behind a slogan: the ads on the page are Google's, and Google may use cookies to personalise them. You decide from the consent banner: if you say no the ads stay, but they are not personalised, and the tool works exactly the same.
If it is free, how do you make money?
From the ads on the page, and that is all. We do not sell your data, there is no hidden paid plan, there is no limit that eventually asks for your card, and you do not have to sign up. The ads pay for the servers and for the time we spend writing the tools: that is how we can keep them open to everyone.
